Hi, my name is Ruth Shin and I want to welcome you to The Savoy Truffle & Cake! I am completely
self-taught in all aspects of baking, cooking, and sugar crafts. Cooking has long been a passion
of mine, but way before I even made my first homemade batch of ravioli from scratch or grilled
Tandoori chicken; I was in the kitchen baking. It was baking that first opened up a sensuous world
of sight, smell, taste, and texture. I have come full circle back to my baking roots, but with a
twist. Now I can combine my love of craft and handiwork with not just baking, but also my passion
for research, careful detail work, and unique aesthetics. I started The Savoy Truffle to share that
gift with everyone else and to make your moments truly memorable. My hope is that as in the words
to the famed song, "you'll have to have them all pulled out after the savoy truffle." -The Beatles
All of our cakes are made with butter, cake flour, eggs, sugar, etc., but you can request a reduced fat/cholesterol/calorie version or with all organic ingredients.
Swiss or Italian meringue buttercreams are the standard buttercreams we use. However, if appropriate you make ask for American-style buttercream. All our buttercreams are made with organic free-range eggs and European-style butter.

All our ganaches (excluding white chocolate ganache which is made with Guittard chocolate) are made with Colombian single-origin chocolate. You can request another brand of chocolate to your preference. If you do not see a flavor you want below, please inquire.
We use only local organic cream for our truffles and only the freshest ingredients. All our truffles are made with Colombian single-origin chocolate. You may request either single-origin Guittard or Scharffenberger chocolate instead for an additional charge. You can opt for the original truffle dusted in cocoa or nuts, or covered with dark, milk or white couverture chocolates, or have patterns transferred onto them. Couverture chocolate and transfer patterns are for an additional charge.
